Notes:

It’s super important that you pitch enough healthy yeast.

Ferment at 10 deg until 50% of the fermentation is complete (gravity reading required) for me this is usually at day 4 or 5. Then increase temps by 1-2 deg every 12 hours until 16-17 deg is reached. By this stage you should be at or close to FG. Allow for fermentation to finish or some time for VDK rest to occur. Then cold crash, keg/bottle and enjoy.
