Notes:
Mash in at 50deg for 45min. Pull 8.5L of mash out of mash tun and boil in kettle for 30min, stirring constantly to avoid scorching. Return boiling decoction to mash tun, which should bring temperature up to 75deg. Sparge and boil as normal.
Build up 4L starter with WY2001 Urquell Lager. Pitch at 10deg. Once attenuated around 50%, begin raising temperature by 2.5deg every 12 hours until reaching 20deg. Leave at 20deg until fermentation is complete. Cold crash and rack.
The conventional wisdom is that a decoction is not necessary with today’s highly modified malts but the extra melanoidin character it gave this recipe led me to believe it is well worth the extra hour it adds to brew day. This recipe was originally intended as a Dark Czech Lager, a style that straddles Munich Dunkel and Schwarzbier.
